General objectives:

- Increase knowledge competitiveness the research by completing a partnership in biotechnology food, which will contribute to obtaining and application on the level pilot / manufacturing of innovative technologies for the manufacture of dairy products functional category (food-drug).

- Development of new biotechnology techniques and procedures for the preservation and use of probiotic lactic bacteria, with impact on food safety and quality of life (prevention of cardiovascular and gastrointestinal diseases)

- Achievement of biological preparations with superior performance in terms of development and functional range of probiotic dairy products, for the benefit of human health

- The transfer of research results of a trader in order recovery in production

Project summary:

Enhancing the quality of life is a desideratum of major importance in the current stage of development of Romanian society, determined by default and ensuring health of the population. One of the factors influencing the maintenance of health is the nutrition balanced in nutrients and functional ingredients with positive impact on physical or mental performance of the consumer. Awareness of the impact of this concept among the population gave birth to the emergence and development of new types of food entitled generic "functional foods". They are located on the border between conventional foods and the type of medicine and food status of benefit to human health and the prevention illness. Functional foods present a special function when ingested, are involved in regulating certain metabolic functions, such as: improving the biological mechanisms of defense (immune system), prevention of specific diseases and physiological modulation systems, the recovery after the disease control physical condition and mental, slow the aging process, etc.. Theme project aims to increase safety in use and increase the duration of manifestation of functional properties of probiotic lactic bacteria, using innovative techniques protection by microencapsulation. Encapsulating bacteria of the genus "bifidus" will be used in probiotic formula, which will be used for the biological development of a new range of probiotic dairy products. The research aim of finding solutions to increase the functional nature of lactic bacteria by protect them using special microencapsulation, so they preserve more properties. Their functional role will be demonstrated by tests „in vitro” and „in vivo”. The obtained bio-mix products will be a medicine-food with highly increased therapeutically qualities compared to the existing probiotics. The advantage of these products is that the survival rate of probiotic bacteria on the intestinal wall will be highly increased, having the guaranty of their proven therapeutic effects. Subscribed to the “BIOTECHNOLIES” research theme, the project serves the purpose of creating new technologies of obtaining biomixes containing probiotic microflora with superior biotechnological and functional qualities, and with a high safety rate for human usage. It is stipulated the extension of work from lab-level to industrial production, for developing the range of functional products with superior properties and a high rate of food safety. Products made in the research works will be analyzed and compared with last tested formula of probiotic bacteria carried out by specialized companies, leaders in the world. .
